Walnuts that have been soaked and dried are less bitter and much crunchier. Use whatever berries look best at the market, but keep plenty of halved strawberries for colour.

Step 1: Blend the dates with the orange juice and zest until you have a smooth, pourable syrup, adding a teaspoon of water if needed.

Step 2: Toss the strawberries, raspberries and blueberries in a patterned serving bowl, handling the raspberries gently.

Step 3: Drizzle the orange-date syrup over the berries and turn them over once with a large spoon to coat lightly.

Step 4: Scatter the walnut halves across the top and serve straight away while the fruit is cool and firm.
