Method

Step 1: Blend the avocado, cacao powder, drained dates and almond milk until silky and very dark, scraping down the sides often.

Step 2: Rinse the processor, then blend the soaked cashews, banana and lemon juice into a thick, pale banana cream.

Step 3: Spoon a layer of chocolate mousse into each footed glass, add a few thin banana slices, then a layer of banana cream.

Step 4: Repeat the layers, finishing with chocolate, and chill for an hour so the layers firm up.

Step 5: Set a whole strawberry on top of each parfait and scatter a few cacao nibs around it before serving.
