Cacao Banana Parfait in a Footed Glass

4.9(80 ratings)

Avocado blended with cacao and dates makes a mousse so dark and glossy that nobody guesses its secret. It alternates with a pale banana and cashew cream for dramatic stripes. Served in a footed dessert glass with one ripe strawberry on top, it works just as well for a special breakfast as for dessert.

Method

  1. Step 1: Blend the avocado, cacao powder, drained dates and almond milk until silky and very dark, scraping down the sides often.

  2. Step 2: Rinse the processor, then blend the soaked cashews, banana and lemon juice into a thick, pale banana cream.

  3. Step 3: Spoon a layer of chocolate mousse into each footed glass, add a few thin banana slices, then a layer of banana cream.

  4. Step 4: Repeat the layers, finishing with chocolate, and chill for an hour so the layers firm up.

  5. Step 5: Set a whole strawberry on top of each parfait and scatter a few cacao nibs around it before serving.
