Pecan Date Chia Pudding Bowl

Think of this as a spoonable bliss ball: the same dates and pecans, just loosened with homemade nut milk and thickened by chia. Blending a few dates straight into the milk sweetens every bite evenly, and a little cinnamon makes it taste like pecan pie filling. A bright bowl sets off the dark seeds and the glossy date topping nicely.

Method

  1. Step 1: Blend the soaked almonds with the filtered water on high for one minute, then strain through a nut milk bag, squeezing firmly to extract as much milk as possible.

  2. Step 2: Return the milk to the blender with three of the dates, the cinnamon, vanilla and salt, and blend until completely smooth and lightly caramel colored.

  3. Step 3: Pour the sweetened milk into a bowl, whisk in the chia seeds, wait five minutes, then whisk again to break up any clumps that have formed.

  4. Step 4: Cover and refrigerate for at least 4 hours or overnight, until the pudding is thick enough to hold a spoon upright.

  5. Step 5: Chop the remaining two dates. Spoon the pudding into serving bowls and top with the chopped pecans and date pieces just before eating.
