Crackly Sunflower Sesame Brittle Thins

The trick to a raw brittle that actually crackles is spreading it very thin and giving it plenty of time. Psyllium and a little chia help the nectar set into a lacy sheet, so the seeds stay put when you cut it. Ginger adds a quiet warmth, and when the thins are stacked on a dark plate the golden seeds really stand out.

Method

  1. Step 1: Whisk the coconut nectar, ginger, salt and psyllium together in a bowl, then let it stand for five minutes so the psyllium begins to thicken the syrup.

  2. Step 2: Stir in the sunflower seeds, pumpkin seeds, sesame and chia until evenly coated, then rest the mixture another ten minutes while the chia swells.

  3. Step 3: Spread the mixture onto two lined dehydrator trays as thinly as possible, about 1/8 inch, using an offset spatula dipped in water to push it into the corners.

  4. Step 4: Dehydrate at 115F for 6 hours, then score into rectangles with a knife, flip onto mesh screens and peel away the lining.

  5. Step 5: Continue drying for another 10 to 12 hours until the thins feel completely dry and snap cleanly, then break along the score lines once cool.
