Method

  1. Step 1: Pulse the soaked and dried almonds in a food processor until they resemble coarse sand, stopping before they turn into butter or clump against the sides of the bowl.

  2. Step 2: Add the pitted dates, almond butter, vanilla, cinnamon and salt, then process for about one minute until the mixture forms a sticky mass that holds when pinched.

  3. Step 3: If the dough feels crumbly, add water one teaspoon at a time and pulse again, since dates vary widely in moisture from batch to batch.

  4. Step 4: Scoop level tablespoons of dough and roll firmly between your palms into smooth balls, lightly dampening your hands if the mixture starts to stick.

  5. Step 5: Chill the balls on a tray for 30 minutes to firm up, then pile them into a bowl with a few whole dates and almonds for serving.
