Apricot Pistachio Fruit and Nut Slab

Inspired by the fruit and nut cakes served with cheese boards, this slab needs no baking and no binder beyond sticky fruit. Unsulphured apricots taste deeper and more honeyed than the bright orange kind, and they pair beautifully with pistachios and a little orange zest. Slice it thinly with a sharp knife and serve straight from a wooden board.

Method

  1. Step 1: Snip the apricots into quarters with kitchen scissors. If they feel leathery, soak them in warm water for 15 minutes, then drain and pat thoroughly dry.

  2. Step 2: Pulse the almonds in a food processor until coarsely ground, then add the dates, half the apricots, coconut butter, orange zest, cardamom and salt and process into a thick paste.

  3. Step 3: Tip the paste into a bowl and knead in the remaining apricot pieces and the cup of pistachios by hand so they stay whole and visible.

  4. Step 4: Press the mixture firmly into a parchment-lined 8 by 4 inch loaf pan, smoothing the top, then press the reserved pistachios into the surface.

  5. Step 5: Refrigerate for at least 3 hours to set, then lift out by the parchment and cut into thin slices with a sharp knife wiped clean between cuts.
