Mango Passion Fruit Slice with Physalis

Mango brings body and sweetness, passion fruit brings sharpness and those crunchy dark seeds. Together they make a slice that tastes like a holiday. A coconut-macadamia base keeps things tropical from bottom to top. Peel the husks of the physalis back like petals and set one on each square for a playful, golden finish.

Method

  1. Step 1: Process the macadamias, coconut and dates until sticky and press into an 8-inch square pan lined with parchment.

  2. Step 2: Blend the cashews, mango, most of the coconut nectar and the coconut oil until smooth and sunny yellow. Spread over the base and freeze for 2 hours.

  3. Step 3: Stir the passion fruit pulp with the ground chia and the remaining nectar and let it thicken for 15 minutes into a spreadable glaze.

  4. Step 4: Spread the glaze over the firm mango layer and freeze for 4 more hours. Cut into nine squares and top each with a physalis.
