Green Mint Lemonade Pops

Mint and lemon are a natural summer pairing, and a little baby spinach gives these pops a vivid green colour without any taste. Thin lemon slices pressed against the mould walls look beautiful once frozen. They are tart, clean and cooling, exactly what you want after an afternoon in the garden.

Method

  1. Step 1: Blend the lemon juice, coconut water, coconut nectar, mint leaves and spinach on high for about 45 seconds until bright green.

  2. Step 2: Strain through a fine sieve, pressing on the pulp, to remove leafy bits. Taste and add more nectar if it makes you pucker too much.

  3. Step 3: Press a thin lemon slice and a small mint sprig against the inside wall of each popsicle mould.

  4. Step 4: Pour the lemonade carefully into the moulds, insert the sticks and freeze for at least five hours before unmoulding.
