Creamy Avocado Lime Pops

The fruit itself fades into the background once lime and coconut nectar join in. Serve them on crushed ice with extra lime slices, and nobody will guess what makes them so rich.

Method

Step 1: Scoop the avocado flesh into a blender and add the lime juice, zest, coconut water, coconut nectar and salt.

Step 2: Blend on high until completely smooth and pale green, then taste. It should be slightly sweeter and sharper than you would drink it.

Step 3: Slide a thin lime wheel into each mould, pressing it against the side so it shows through once frozen.

Step 4: Pour in the avocado mixture, insert the sticks and freeze for at least five hours. Serve on ice with more lime slices.
