Chocolate Oat Groat Pudding with Almonds

Soaked oat groats blended with cacao and dates turn into something closer to a chocolate mousse than a porridge. The little chocolate discs on top are just melted cacao butter, cacao powder and coconut nectar, dropped onto parchment and set in the fridge. Whole soaked almonds add crunch and make the pudding more filling.

Method

  1. Step 1: Melt the cacao butter in a bowl set over warm water, keeping it below 115F, then whisk in the cacao powder and coconut nectar.

  2. Step 2: Drop teaspoons of the chocolate onto parchment, tap to spread into small discs and chill for twenty minutes until firm.

  3. Step 3: Blend the drained oat groats with the almond milk, dates, cacao and salt until completely smooth and thick.

  4. Step 4: Spoon the pudding into bowls, press whole almonds into the surface and stand the chocolate discs upright among them.
