Chia-Speckled Watermelon Pops

These pops look just like mini watermelon slices, thanks to a scattering of chia seeds that plays the part of the pips. Nothing more than fruit, lime and a little mint goes in, so they are as hydrating as they are pretty. Kids love helping to sprinkle the seeds into each mould before freezing.

Method

  1. Step 1: Blend the watermelon, lime juice, coconut nectar, mint and salt until completely liquid, then strain through a sieve to remove any foam and pulp.

  2. Step 2: Pour the juice into eight triangular or standard popsicle moulds, filling them almost to the top.

  3. Step 3: Sprinkle a generous pinch of chia seeds into each mould and stir gently with a skewer so the seeds scatter through the juice.

  4. Step 4: Freeze for one hour, stir once more to redistribute any seeds that sank, then insert the sticks and freeze for at least four more hours.
