Berry Coulis Cacao Mousse Glasses

A spoonful of berry coulis at the bottom of each glass adds a hidden burst of tartness that surprises people halfway through. The coulis is just blended berries and a date, no thickeners needed. Everything is done in one blender, rinsed once between steps. Finish with a few blueberries and a drizzle of extra coulis for a glossy top.

Method

  1. Step 1: Blend the mixed berries with the date until smooth, strain if you like, and spoon about 2 tbsp into the bottom of each glass.

  2. Step 2: Rinse the blender, then blend the avocados, cacao powder, date paste, almond milk and salt until thick and satiny.

  3. Step 3: Spoon the mousse carefully over the coulis so the layers stay separate, and chill the glasses for 45 minutes.

  4. Step 4: Drizzle the remaining coulis over the tops and finish with a small cluster of blueberries in the center of each glass.
