Method

  1. Step 1: Soak the bamboo whisk tines in a little warm water for a minute so they soften and do not snap while whisking.

  2. Step 2: Sift the matcha into a wide bowl, add the water and whisk briskly in an M or W motion for 20 to 30 seconds until a fine foam forms.

  3. Step 3: Stir the yacon syrup and salt into the cold almond milk, then pour it into a cut glass filled with ice.

  4. Step 4: Slowly pour the whisked matcha over the top, letting it cascade through the milk, and stir gently just before drinking.
