Watermelon Basil Slush with Green Chaser

Watermelon is mostly water, which makes it the easiest fruit to turn into a slush: freeze it, blend it and you are done. Basil adds a surprising, slightly peppery perfume. The green slush in the background uses the same method with cucumber and lime, and it makes a cooling, less sweet sip between mouthfuls of the red.

Method

  1. Step 1: Freeze the watermelon cubes and chopped cucumber on separate lined trays for at least four hours, until both are firm right through.

  2. Step 2: For the red slush, blend the frozen watermelon with the basil, two tablespoons of lime juice and a splash of coconut water until thick and icy.

  3. Step 3: Pour the red slush into two glasses and place them in the freezer while you rinse the blender, so the slush holds its texture.

  4. Step 4: For the green slush, blend the frozen cucumber, mint, remaining lime juice, remaining coconut water, coconut nectar and ice until slushy.

  5. Step 5: Pour the green slush into small glasses, set them behind the red ones and serve both with straws right away.
