Fresh Orange Juice with Muddled Mint

Muddling mint releases its oils directly into the glass, so the aroma rises with every sip without turning the juice green. Navel or cara cara oranges both work well, and a squeeze of lime sharpens their sweetness. Squeeze the fruit only when you are ready to drink, and keep a halved orange alongside for serving.

Method

  1. Step 1: Place the mint leaves and coconut nectar, if using, in the bottom of a sturdy glass and press them gently with a muddler five or six times to bruise the leaves.

  2. Step 2: Squeeze the halved oranges on a citrus reamer, straining out the seeds but letting plenty of the pulp fall into the jug.

  3. Step 3: Add the ice cubes to the glass over the muddled mint, pour in the orange juice and lime juice and stir from the bottom to lift the mint through.

  4. Step 4: Garnish with a fresh mint sprig and set the glass on a dark board beside the halved orange before serving.
