Cashews are the most forgiving nut for milk because they break down almost completely, leaving nothing to strain. The result pours like whole milk and has a gentle sweetness that suits morning cereal or a quiet glass on its own. A short soak is enough, so this can come together between breakfast and lunch.

Method

  1. Step 1: Soak the cashews in plenty of water for two hours, then drain them and give them a thorough rinse to remove the starchy soaking liquid.

  2. Step 2: Place the cashews in a blender with the chilled water, scraped vanilla seeds, coconut nectar and salt, and blend on high for 45 seconds.

  3. Step 3: Taste and adjust the sweetness, adding a little more nectar if you like, then blend again briefly with the ice cubes for an extra-cold glass.

  4. Step 4: Pour into glasses and serve straight away, or store in a sealed jar in the fridge for up to three days, shaking before each pour.
