Pineapple Boat Fruit and Granola Bowl

A pineapple boat turns breakfast into something of an event, and none of the fruit goes to waste. The scooped-out flesh is diced and mixed straight back in with banana and berries. A drizzle of lime and coconut nectar brings everything together, and dehydrated buckwheat granola goes on at the table.

Method

  1. Step 1: Lay the pineapple on its side and cut it lengthwise through the leaves, keeping the crown attached to both halves.

  2. Step 2: Run a knife around the inside of one half about 1cm from the skin, score the flesh in a grid and scoop out the cubes, discarding the woody core.

  3. Step 3: Whisk the lime juice and coconut nectar, then toss with the pineapple cubes, banana, strawberries and blueberries.

  4. Step 4: Pile the fruit back into the hollow pineapple shell, mounding it slightly above the rim.

  5. Step 5: Scatter the granola across the top just before serving and add a few mint leaves near the crown.
