Layered Acai Cup with Coconut Granola

Building an acai bowl in a cup means every spoonful goes through fruit, sorbet and crunch. The granola here gets its golden colour from shredded coconut and a long, slow session in the dehydrator rather than an oven. Coconut nectar caramelises gently at low heat and gives it a warm, almost toffee flavour.

Method

  1. Step 1: Toss the sprouted buckwheat, shredded coconut, coconut nectar and salt together, then spread thinly on a lined dehydrator tray.

  2. Step 2: Dehydrate at 115F for about 9 hours, breaking it up halfway, until golden, dry and crisp throughout.

  3. Step 3: Blend the acai powder, frozen berries, frozen banana and coconut water until you have a stiff, spoonable sorbet.

  4. Step 4: Layer a spoonful of sorbet into each tall glass, add strawberry slices against the glass and a sprinkle of granola, then repeat.

  5. Step 5: Finish each cup with a final generous layer of coconut granola and a few strawberry slices on top.
