Matcha Avocado Bowl with Granola Stripes

Half an avocado makes this matcha bowl unusually smooth and keeps its colour a soft, milky green. Ceremonial matcha has a grassy sweetness that works well with banana, so you need very little extra sweetener. Laying the toppings in straight lines takes an extra minute and gives a clean, graphic finish.

Method

  1. Step 1: Whisk the matcha into two tablespoons of the almond milk to form a lump-free paste before it goes into the blender.

  2. Step 2: Blend the matcha paste, remaining almond milk, avocado, coconut nectar and frozen banana until thick, smooth and evenly pale green.

  3. Step 3: Spread the mixture into two shallow bowls and smooth the surface flat with the back of a spoon.

  4. Step 4: Lay a straight stripe of diced kiwi across each bowl, then a stripe of chia seeds beside it and a wider stripe of granola.

  5. Step 5: Serve straight away, before the chia seeds start absorbing moisture from the base and lose their neat line.
