Method

  1. Step 1: Soak the cashews in cold water for four hours, then drain and rinse well so the base tastes clean and sweet.

  2. Step 2: Blend the soaked cashews, almond milk, dates, vanilla and salt until completely silky before adding any frozen fruit.

  3. Step 3: Add the frozen banana and blend again briefly, just until thick and creamy, so the mixture stays cold and scoopable.

  4. Step 4: Cover the goji berries with water for ten minutes, then drain and pat them dry on a towel.

  5. Step 5: Spoon the smoothie into wooden bowls and top with goji berries, coconut flakes and whole cashews in loose clusters.
