Method

Step 1: Steep the butterfly pea flowers in the room temperature water for 2 hours until deep blue, then strain into a wide shallow dish.

Step 2: Stir in the lemon juice and watch the tea shift from blue to purple, adding a few more drops for a pinker shade.

Step 3: Dip a rice paper sheet into the purple tea for 15 to 20 seconds, a little longer than usual so it absorbs the color.

Step 4: Lay the sheet on a damp board and add a lettuce leaf, then mango strips, cucumber, cabbage and several basil leaves.

Step 5: Fold in the sides, roll up tightly and repeat, then stand the rolls upright on a wooden stand or board and serve with coconut aminos.
