Method

Step 1: Rinse the chopped red onion in a sieve under cold water for 30 seconds, then shake it dry so its bite softens without losing crunch.

Step 2: Place the onion, cilantro, tomatoes, jalapeno, salt and cumin into separate small bowls and arrange them on a board or tray.

Step 3: Halve and pit the avocados just before serving, then squeeze a little lime over each cut face to slow browning.

Step 4: Set out spoons and forks so each person can mash avocado in its shell or on a plate and stir in toppings to taste.
