Kiwi Cucumber Lime Cooler

Kiwi is too pulpy to juice well, so the trick is to press the cucumber and apple first and then blend the kiwi into that juice. A quick strain leaves just enough body to make the cooler feel substantial while keeping it light and sippable. Its sharp, green flavor is best on a hot day, poured over lots of ice.

Method

  1. Step 1: Juice the cucumbers and green apples, or blend them with a splash of water and strain through a nut milk bag, to get about two cups.

  2. Step 2: Pour the juice into the blender with the peeled kiwis, lime juice and mint, and pulse briefly until the kiwi is broken down but the seeds are mostly whole.

  3. Step 3: Pour through a medium sieve to catch the seeds and larger pulp, pressing lightly so some of the kiwi body still passes through.

  4. Step 4: Fill ribbed glasses with ice, pour the cooler over and cut a slit in each kiwi slice to perch it on the rim.
