Dehydrated Orange and Lemon Wheels

Orange slices dry into chewy-crisp sweet coins, while lemon becomes tart and aromatic. Nibble the orange as a snack, drop lemon wheels into water or tea, and use both as edible decoration on raw cheesecakes. Hang a few on string and they double as seasonal decor.

Method

Step 1: Scrub the citrus under warm water and dry well, then slice into rounds about 1/8 inch thick, flicking out any seeds.

Step 2: If you like sweeter orange wheels, brush them lightly with coconut nectar and dust with a whisper of cinnamon and salt.

Step 3: Arrange the slices on round dehydrator trays in a single layer, fitting them snugly without overlapping.

Step 4: Dehydrate at 115F for 8 to 10 hours, rotating the trays halfway, until the flesh is translucent and dry to the touch.
