Try this raw vegan salad and dressing combo for a sweet and zingy way to get your apple a day along with your greens and Vitamin C!
Orange Ginger Dressing:
1 orange, peeled
½ inch piece of ginger, peeled and chopped
2 small cloves of fresh garlic
½ tsp raw almond butter
¼ cup raw cashews
Dash of Himalayan pink or sea salt
1 tsp of nama shoyu
1 tsp cold pressed extra virgin coconut oil
1 large apple, cut into bite sized chunks
1 cup baby spinach
2 cups romaine lettuce, cut into squares
3 baby cucumbers, sliced into thin rounds
1/2 cup walnuts, chopped
(1) Prepare salad ingredients as indicated and place in a large bowl.
(2) Add dressing ingredients to a blender and blend until smooth.
(3) Pour dressing over salad and toss to coat salad ingredients thoroughly.
(4) Place dressed salad in serving bowl and serve fresh.
