This colorful raw vegan salad offers all the superfood benefits of fresh kale combined with a nutritious and flavorful Asian dressing. Kale never tasted so good!
1/4 cup raw almond butter (or 1/3 cup raw almonds)
Juice of half a lemon
1 ½ inch piece of ginger
2 medium garlic cloves
1/2 tbsp raw apple cider vinegar
3 tbsp nama shoyu
2 cups kale, ripped into pieces
1 tomato, cubed
1/2 red bell pepper, cut into squares
1 carrot, grated
1/2 green onion stalk, cut into rings
½ stalk celery, chopped
Black sesame seeds
Add dressing ingredients to blender and blend thoroughly until smooth and creamy.
Prepare salad ingredients as indicated and place on a plate or in a serving bowl.
Drizzle with the desired amount of dressing, and toss if desired.
Sprinkle black sesame seeds on top.
